This fresh, tasty veg makes a great accompaniment to roasts.
Roasted Purple Sprouting Broccoli with Lemon and Parmesan
Ingredients:
- 1 bunch of purple sprouting broccoli
- 2 tablespoons olive oil
- Zest of 1 lemon
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- Salt and pepper to taste
- 25 grams grated Parmesan cheese
Method:
- Preheat the Oven: Preheat your oven to 200°C (180°C fan) or Gas Mark 6.
- Prepare the Broccoli: Trim the tough ends of the purple sprouting broccoli and cut any larger pieces in half lengthwise. Rinse the broccoli under cold water and pat it dry with a clean kitchen towel.
- Seasoning: In a large bowl, toss the broccoli with olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper. Ensure the broccoli is evenly coated with the seasoning.
- Roast the Broccoli: Spread the seasoned broccoli in a single layer on a baking sheet. Roast in the preheated oven for about 15-20 minutes or until the broccoli is tender and slightly crispy at the edges. You can toss the broccoli halfway through the roasting time to ensure even cooking.
- Finishing Touch: Once the broccoli is roasted to perfection, remove it from the oven and transfer it to a serving dish. Sprinkle the grated Parmesan cheese over the top while the broccoli is still hot, allowing the cheese to melt slightly.
- Serve: Serve the roasted purple sprouting broccoli as a side dish alongside your favourite main course.
