Piccolo Tomato Salad with Cucumber, Red Onion, and Feta
Ingredients:
- 400g piccolo tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 125g feta cheese, crumbled
For the Vinaigrette:
- 60ml extra-virgin olive oil
- 30ml balsamic vinegar
- 5g Dijon mustard
- Salt and pepper to taste
Method:
- In a large salad bowl, combine the halved piccolo tomatoes, sliced cucumber, red onion, and crumbled feta cheese.
- In a small bowl or jar, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to create the vinaigrette.
- Pour the vinaigrette over the salad ingredients.
- Gently toss the salad to coat the ingredients evenly with the vinaigrette.
- Allow the salad to marinate for a few minutes before serving to allow the flavours to meld.
- Taste and adjust the salt and pepper if needed.
- Serve the Piccolo Tomato Salad immediately as a refreshing side dish or a light lunch.
